Özet:

PENDİK SAHİLİNDEN (İSTANBUL) AVLANAN KARA MİDYE (Mytilus galloprovincialis)’LERDE BAZI AĞIR METALLERİN BELİRLENMESİ Endüstri ve sanayinin gelişmesi ile bu sektörlerden kaynaklanan atıkların miktarında hızlı bir artış meydana gelmiştir. Denizlere deşarj olan bu ve benzeri sektörlerden kaynaklı atıkların içeriğindeki metal iyonları sucul ortamda yaşayan organizmaların bünyelerine girerek çeşitli zararlı etkiler meydana gelir. Sanayi ve insan etkilerinin yanı sıra toprak erozyonuyla, atmosferdeki gazlar yoluyla, akarsularla, tarım yoluyla, denizaltı volkanik aktiviteler gibi yollarla denizlere metal iyonları taşınır. Deniz suyunda metaller fiziksel olarak dört esas formda bulunur. Bunlar; Suda çözünmüş olarak, kolloid parçacıkları olarak, canlı organizmaların bünyesinde, diğer kolloid parçacıkları üzerindedir. Ağır metaller denizlerde daha çok dibe (sedimente) çökerler bu nedenle dipte yaşayan canlılarda özellikle midyelerde birikiminin yüksek olduğu yapılan biyoakümülasyon çalışmalarında görülmüştür. Besin zincirinde bu canlılarla beslenen diğer balıkların bünyesinde ağır metal birikiminin devam etmesi ve soframıza kadar gelmesi kısa zamanda olmasa da uzun zamanda insan sağlığını olumsuz etkilediği bilinmektedir. Gerekli ölçüde alındığında insan sağlığına yararı olan birkaç metalin dışında ağır metaller vücuda alındığında toksik etki göstermektedir ve insan vücudundan atılmaları metabolik yollarla oldukça güç olmaktadır. Bu çalışmada, İstanbul Pendik İlçesi kıyı hattı boyunca belirlenen 5 istasyondan Temmuz 2011 – Haziran 2012 tarihleri arasında aylık örnekleme yöntemi ile toplanan toplam 60 kara midyesi örneğinin incelenmesi ile kurşun ve kadmiyum seviyeleri belirlenmiştir. Bu inceleme neticesinde; kurşun içeriğinin 0,15 – 8,66 mg/kg arasında değişen değerlerde olduğu kadmiyum (Cd) miktarının ise 0,01 mg/kg - 0,19 mg/kg olduğu tespit edilmiştir. 17.05.2008 Tarih ve 26879 Sayılı Resmi Gazetede yayımlanarak yürürlüğe giren “Gıda Maddelerindeki Bulaşanların Maksimum Limitleri Hakkında Tebliğ” de belirtilen bazı ağır metal türlerinin gıda maddelerinde bulunabilecekleri sınır değerleri kurşun için 1,5 mg/ kg, kadmiyum için ise 1,0 mg/kg olarak ifade edilmiştir. Sonuç olarak Pendik sahilinden toplanan örneklerde; kadmiyum düzeylerinin mevzuatta belirtilen sınır değerlerin altında olduğu bununla birlikte örneklerin % 60’ının kurşun düzeyinin sınır değerin üzerinde olduğu ve bu çalışmada incelemeye alınan, İstanbul İli Pendik İlçesi kıyılarından avlanmış Kara Midyeler (Mytilus galloprovincialis)’lerde ortalama kurşun Değerinin yaklaşık 2,63 mg/kg olduğu, bununla birlikte ortalama kadmiyum miktarının ise yaklaşık 0,01 mg/kg olduğu tespit edilmiş olup, bölgenin her ne kadar kadmiyum açısından sınır değerlerin altında kaldığı tespit edilmiş ise de kirlilik bileşenlerinden en az birinin (kurşun (Pb)) mevzuatla belirlenen sınır değerlerin üzerinde kalması sebebiyle gıda olarak tüketilememesi gerektiği anlaşılmıştır. ABSTRACT IDENTIFYING HEAVY METALS IN BLACK MUSSLES (MYTILUS GALLOPROVINCIALIS) CAUGHT IN PENDIK SHORE (ISTANBUL) By the development of industry, there have been rapid increases in the rate of wastes generating from this sector. Metal ions contained by the wastes discharged to the seas produced by such types of sectors get involved in the body of organisms living in aqueous media, which as a result cause various detrimental effects. Along with industrial and human originated effects, metal ions are carried into the seas through soil erosion, gases in the atmosphere, streams and rivers, agriculture and undersea volcanic activities. Metals in sea water exist in four essential forms: as dissolved in water, as colloid particles, within the body of live organisms, on other colloid particles. Heavy metals usually sink onto the bottoms (sediment) of the seas, hence in bioaccumulation works illustrate that the living creatures especially in mussels living on the bottom of the sea have a high rate of accumulation. It is known that in the long run if not in a short period, other types of fishes which are fed with these creatures in the food chain sustain heavy metals, and thus affect human health negatively as they reach our dinner tables. Heavy metals, except those which are good for health when taken in required measurement, show toxic effects on the body and excreting them from the body through metabolic ways is very difficult. In this study, the five stations along the line of the coastal district of Pendik July 2011 - June 2012 between the black mussel total of 60 samples collected by monthly sampling method by examining the levels of lead and cadmium were determined. As a result of this study, lead levels from 0.1450 to 8.6620 mg / kg is changing between cadmium (Cd) value in the range of 0.0080 mg / kg - 0.1880 mg / kg were determined. Date and entered into force 05.17.2008 published in Official Gazette No. 26879 "Maximum Limits of Contaminants in Foodstuffs" Communiqué on who may be indicated in some of the heavy metal limit values for lead in foodstuffs 1.5 mg / kg, while for cadmium of 1.0 mg / kg unless otherwise stated. Lead and cadmium levels have been designated by this study through scrutinizing 60 black mussel samples collected through monthly sampling model between the dates of July 2001 – June 2012 from 5 stations along the coast of Pendik locality of Istanbul. As a result of this analysis, the level of lead is detected between 0,15 – 8,66 mg/kg while cadmium (Cd) value range is detected between 0,01 mg/kg - 0,19 mg/kg. The level of heavy metals that could be contained in food items are given as 1,5 mg/ kg for the Lead, and 1,0 mg/kg for the cadmium specified at “Annunciation about Maximum Limits of Contaminant in Food Items” published and put into effect on Official Gazette No 26879 and dated 17.05.2008. Consequently, in the samples collected on Pendik shores; the cadmium rates thats is under the rates of the limits stated in the Regulations while 60 % of the samples have above the limit of Lead level. In addition, Black Mussels (Mytilus galloprovincialis), caught on the shores of Pendik locality of Istanbul city, have an average lead value of 2,63 mg/kg, and approximately 0,1 mg/kg cadmium value. Although it was determined that the region is below the limit value of cadmium, the region has one of the contaminants (Lead (Pb)) is above the limit value specified in the Regulations. Hence, it must not be consumed as a food.
